Cytogenetic and testicular histological alterations induced by sulphur dioxide in dried apricot leather

Abstract: Sulphur dioxide (SO2) is used as a preservative in food to prevent its discolouration, and to inhibit the growth of bacteria. Little data is available concerning its in vivo hazardous impact. The present study is therefore designed to examine the cyto-genotoxic potential and the testicular histological alterations in adult mice, induced by SO2 present in the dried apricot leather used to prepare the oriental drink Qamar Al-Deen. Two different forms of drinks were tested; cold and boiled drinks. Animals were pla… Show more

“…Excessive sulfur dioxide residues lead to potential health risks through excessive or irregular use of sulfur-fumigation. Studies that indicate the excessive residues of sulfur dioxide not only induce respiratory system damage, 2 but also irreversible damage to reproductive system, 3 digestive system, 4 circulatory system, 5 nervous system 6 and immune system, 7 and even life-threatening. 8 More significantly, residual sulfur dioxide is prone to chemical reactions with ketones and hydroxyl groups in some herbs and foods, resulting in the loss of active ingredients.…”
