Designing Processing and Fermentation Conditions for Long‐Life Set Yoghurt for Made‐in‐Transit (MIT) Product

Abstract: Extending yoghurt fermentations could facilitate yoghurt distribution by allowing the fermentation to occur during transportation -a concept known as "made-intransit" (MIT).
