Abstract:Lactic acid bacteria produce various biologically active molecules such as low molecular weight proteins, small peptides and free amino acids during their life cycle. The small peptides have many critical biological functions: immune support, lowering blood pressure, antibacterial activity, and antioxidant activity etc. In this study, 18 lactic acid bacteria were isolated from traditional milk products.
