Determination of cysteine hydrochloride, ascorbic acid and potassium bromate in admixture in bread improver formulations

Abstract: A method of selective extraction is proposed for the determination of cysteine, ascorbic acid and potassium broniate when present in admixture. Other ingredients and varioiis diluent materials that might be encountered in commercial bread improvers have been shown to caiise negligible interference.Suitable titrimetric methods are recommended for each additive after the extraction procedure has been carried out.
