Détermination par épifluorescence des levures vivantes dans le moût de raisin

Abstract: <p style="text-align: justify;">Le dénombrement direct des microorgasnismes par épifluorescence, appliqué dans l'industrie laitière (PETTIPHER <em>et al</em>., 1980), dans le vin (COÛTES et JOHNSON, 1980) et dans le contrôle des eaux (DELATTRE, 1986) est présenté comme une méthode rapide et fiable. Il nous a semblé intéressant de vérifier, si elle était utilisable pour suivre la population levurienne au cours de la fermentation alcoolique.</p>
