“…The SF, recovered in quantity of 0.126 t/t olives, help to increase the income of oil mill (about 3024 Euro/day) because their use as fuel, widespread in Italy, allows to sell them at a price not lower than 120 Euro/t. “…The technology of the double extraction of olive oil was already used in the past, when the pressing system was used , but also in more recent years, when oil mills have adopted the more effective new centrifugal decanter at two‐ and three‐phases . In addition, the same oil mills have improved the value of the solid by‐product by the use of a stoner machine, useful to separate and recover part of SF from olive pomace . However, it is known that the second extraction of olive oil from olive paste already centrifuged may cause a change of some characteristics of virgin olive oil and, therefore, the present work had the purpose to ascertain the effects of the complex diagram of olive processing, adopted in some Italian big‐sized oil mills, on the quality and composition of the obtained virgin olive oils, on the characteristics of the by‐products and on the economy of the process.…”
