Dietary nitrite prevents hypercholesterolemic microvascular inflammation and reverses endothelial dysfunction

Abstract: The nitrite anion is an endogenous product of mammalian nitric oxide (NO) metabolism, a key intermediate in the nitrogen cycle in plants, and a constituent of many foods.
