Aims: This study aimed to compare the concentrations of heavy metals in reindeer and cow meat and offal originating from the Nenets Autonomous Okrug, Northwestern Russia, and to assess the risk to the health of the indigenous population associated with heavy metal intake due to the consumption of reindeer and cow. Methods: Lead, cadmium, mercury, and arsenic concentrations were measured in 39 muscle, 15 liver, and 14 kidney samples from reindeer and 33, 18, and 12 corresponding samples from cow in 2014–2016 using atomic absorption spectrometry. Estimated daily intake of investigated heavy metals, hazard quotient, hazard index and cancer risk were calculated. Results: Mean cadmium and mercury concentrations in reindeer liver and kidney exceeded the maximum permissible levels for bovine animals. However, the estimated daily intakes of heavy metals through consumption of reindeer and cow meat and offal were lower than tolerable daily intakes. Hazard quotient and hazard index values for heavy metals in reindeer and cow samples were <1. Hazard index values were in descending order: reindeer kidney (0.389)>reindeer muscle (0.382)>cow muscle (0.088)>reindeer liver (0.051)>cow kidney (0.012)>cow liver (0.004). The cancer risk related to the consumption of reindeer and cow meat and offal did not exceed acceptable levels. Conclusions: There is no human health risk associated with heavy metal intake due to the consumption of reindeer and cow meat and offal originating from the Nenets Autonomous Okrug.

Humic substances of soils consist of various organic compounds, including polycyclic aromatic hydrocarbons (PAHs). Soil as a fairly stable medium allows the correct use of polyarenes as markers of the humus formation process. Monitoring of the accumulation of PAHs as resistant organic toxicants is also necessary due to their carcinogenic and mutagenic properties. Natural plant resources serve as the feed base of northern reindeer husbandry. In this study, high-performance liquid chromatography in a gradient mode and gas chromatography-mass spectrometry methods were used to estimate the content of PAHs in mountain tundra and meadows of the Polar Urals (Russia). The accumulation of polyarenes in soils on carbonate rocks of the Bolshoi Paipudynsky ridge occurs mainly in the process of soil formation and largely depends on factors such as productivity of plant communities, the composition of standing biomass, the site’s position in relief, the granulometric composition of soils, cryogenesis process and pyrogenesis. According to the set of polyarenes, their number, and ratio, the studied objects were classified into separate groups by discriminant analysis. The most typical representatives of pedogenic origin are naphthalene and phenanthrene. The accumulation features of dibenz[a,h]anthracene and benz[b]-, benz[k]fluoranthene, benz[ghi]perylene, and benz[a]perylene are shown. In mountain tundra landscapes, the characteristics of PAHs can be used to diagnose the intensity and direction of soil formation processes in general and humification in particular.

The presence of toxic metals in harvested game meat is a cause for concern for public health and meat safety in general. Authorities and food safety agencies continue to develop guidelines and limits of the maximum allowable levels of toxic metals in food products. However, the situation is different for game meat products in developing countries, where a number of shortcomings have been identified. This includes a lack of game meat animal slaughter regulations, specific species’ product limits that have not yet been established and the continued use of hunting or game meat animals’ harvesting plans that could introduce the same toxic metals of concern. This review was conducted from English literature published between 2011 and 2021; it highlights the possible health effects and the shortcomings in the implementation of game meat safety production strategies for toxic metals (Arsenic, Lead, Cadmium and Mercury) in game meat animal production. Lead (Pb) remains the most significant threat for toxic metals contamination in game meat animals and the slaughter processes. In most developing countries, including in South Africa, the monitoring and control of these heavy metals in the game meat value chain has not yet been implemented.
