Do Faba Bean Genotypes Carrying Different Zero-Tannin Genes (zt1 and zt2) Differ in Phenolic Profiles?

Abstract: Faba bean is a cool season grain legume that produces seeds with a high protein content. Seed coat tannins limit its use in food and feed. A low-tannin phenotype is controlled by either of two unlinked recessive genes zt1 and zt2. Liquid chromatography–mass spectrometry was used to characterize phenolic profiles of seed coat and flower tissue of three faba bean genotypes: CDC Snowdrop (zt1 gene), Disco/2 (zt2 gene), and ILB 938/2 (tannin-containing). For both tissues, clear differences in phenolic profiles of … Show more

“…The faba bean line with low vicine and convicine was first identified in 1980 and used later to breed several genotypes worldwide (Khazaei et al, 2019). Plant breeding also focused on tannins and resulted in low‐tannin genotypes having 0.01% tannins compared with genotypes‐containing tannin (1%) (Zanotto et al, 2020).…”

“…Similarly, although rutin (quercetin-3-rutinoside) does not appear to have been previously reported from faba bean seed, numerous other types of quercetin glycosides have been found in this matrix [ 8 , 11 ]. In addition, rutin has been reported from the flower tissue of several faba bean genotypes, indicating that the synthetic pathways for the production of this compound do occur in faba bean [ 9 ].…”

“…Due to genotypic variations, which can influence the phenolic and flavonoid biosynthetic pathways [ 9 ], the phenolic content may vary significantly between different varieties of grains and pulses [ 10 ]. Hence, there has been recent interest in identifying faba bean varieties with high levels of phenolic content.…”

“…Pedigreed faba bean seed growers (n = 27) produced white flower (30%) and coloured flower (10%) classes. 15 The seeds of colouredflowered faba bean have high tannin content and whiteflowered faba bean are low in tannin and serve different markets (Zanotto et al 2020).…”
