Don’t forget the veggies! Identifying and addressing a lack of vegetable education in physiology

Abstract: Ninety-five percent of Westerners do not consume the recommended daily vegetable intake, exacerbating the incidence of obesity, malnutrition, and nutritional deficiencies such as fibre.
