“…Une part importante des travaux sur les interactions entre filières et territoires analysent les systèmes agroalimentaires localisés (Muchnik et al, 2008), les filières sous indication géographique (Paus et Reviron, 2010) et s'intéressent aux recompositions à l'oeuvre à partir des notions de « quality, territory and embeddedness » (Ilbery et al, 2005). Le concept « d'ancrage » est largement mobilisé dans cette littérature (Deverre et Lamine, 2010), et trois conceptions sont généralement utilisées : l'ancrage social, spatial ou géographique, et écologique (Baritaux et al, 2016). Pour les filières standard, peu de travaux abordent la structure organisationnelle de ces filières comme verrou ou levier pour assurer une (re)-territorialisation des productions (Fares et al, 2012), alors que Sonnino (2007) montre que les spécificités territoriales peuvent être « appropriés » par des acteurs opérant au niveau global pour maximiser leur profit en accédant à des marchés de niche.…”
