Efeitos da adição de agentes carreadores sobre o pó da polpa de pitaia vermelha (H. polyrhizus) liofilizada

Abstract: O objetivo desse trabalho foi avaliar a influência da maltodextrina, goma arábica e dextrina sobre o pó da polpa de pitaia vermelha liofilizada. A polpa foi caracterizada através das análises de umidade, atividade de água, pH, acidez total titulável, sólidos solúveis totais, ácido ascórbico, cor, betalaínas e compostos fenólicos.
