Abstract: The aim of the study was to evaluate the influence of combined germination and spontaneous fermentation on the phytochemical, mineral, and microbial profile of red sorghum (Sorghum bicolor (L.) Moench) and pearl millet (Pennisetum glaucum (L.) R.Br.) flours.
