Effect of decortication methods on the chemical composition, antinutrients, Ca, P and Fe contents of two pearl millet cultivars during storage

Abstract: Purpose The purpose of this paper is to evaluate the impact of modern and traditional decortication methods on the chemical composition, antinutrients, Ca, P and Fe contents during storage of two pearl millet cultivars (white and green) grown in Sudan. Design/methodology/approach The grains of each cultivar were either decorticated traditionally using traditional stone dehuller or by using modern dehuller. The chemical composition, antinutrients and Ca, P and Fe contents of the cultivars were evaluated durin… Show more

“…The results obtained are in contradiction with a previous study where polishing had no effect on moisture content (Babiker et al, 2018). Moreover, the current study altered the moisture content of grain by surface conditioning.…”

“…In addition to the reduction in anti‐nutrients, the limitations of polishing were also reported by several researchers. Babiker et al (2018) observed de‐branning of pearl millet resulted in a reduction of protein, fat, and dietary fiber by significant levels. Up to 67% of reduction in vitamin E content of little millet was noted after polishing (Kundgol et al, 2013).…”

(Hendek Ertop & Bektaş, 2018).…”

“…Likewise, handpounding or other mechanical devices were used, which causes abrasive decortication of the millets [117]. It has been observed that decortication shows no effect on the levels of fat and protein in millets, whereas it dramatically reduced the crude fiber content, minerals, phytochemicals, antioxidant activity, and antinutrients [118]. Chandrasekara et al [119] showcased that the total phenolic components reduced drastically in kodo and kutki millets after dehulling when compared to whole grain millets due to inconsistent distribution of polyphenolics in distinct layers of the millet grains.…”
