Effect of fermented soybean products intake on the overall immune safety and function in mice

Abstract: Various functional activities have been reported for the fermented soybean products doenjang (DJ) and cheonggukjang (CGJ), although no systemic investigations of their immune functions have been conducted to date. We examined the effects of an experimental diet of DJ, CGJ, or a mixture of unfermented raw material for 4 weeks on overall immunity and immune safety in mice. No significant alterations were observed in peripheral or splenic immune cells among groups. Enhanced splenic natural killer cell activity wa… Show more

“…Cheonggukjang intake can improve plasma lipid profiles and fasting blood glucose levels in subjects with impaired fasting glucose control [14]. In addition, cheonggukjang intake produces an inhibitory effect on allergic asthma that is exacerbated by histamine release from mast cells, as well as other allergic responses [15,16].…”

“…Single-cell suspensions of spleen cells were prepared, as described elsewhere (Lee et al, 2017). Splenic T cells were stimulated in vitro with an immobilized anti-CD3 monoclonal antibody (mAb) (5 µg/5 × 10 5 cells; BD Biosciences) and 10 IU human recombinant interleukin (IL)-2 (PeproTech, Rocky Hill, New Jersey, USA) for 48 h at 37°C in a 5% CO 2 incubator.…”

“…IL-4, interferon-γ (IFN-γ), and tumor necrosis factor-α (TNF-α) were measured in culture supernatants using the OptEIA ELISA sets (BD Biosciences) as a paired capture and detection antibody, as described elsewhere (Lee et al, 2017). Serum immunoglobulin E (IgE) and IgA levels were determined by sandwich ELISA using antimouse IgE or IgA mAb as the capture Ab and biotinylated antimouse IgE or IgA mAb as the detection Ab (BD Biosciences).…”

“…Hyriopsis cumingii polysaccharides in dose-dependent manner promote IL-2 and IFN-γ production in vivo (Qiao et al, 2017). Doenjang and Cheonggukjang, two fermented soybean products, can upregulate production ratio of IFN-γ to IL-4 in stimulated splenic T-and B-lymphocytes (Lee et al, 2017). Fermented mung bean and soybean can increase IL-2 by 1.7-and 1.9-fold, and enhance IFN-γ by 15-and 18-fold, respectively (Ali et al, 2015).…”
