Abstract: Leafy vegetables play a crucial role in the human diet providing numerous nutrients and health benefiting compounds. Leafy vegetables like collard (Brassica oleracea var. acephala) and black nightshade (Solanum nigrum l.) are commonly consumed leafy vegetables in Kenya.
