Abstract:One of the most important stages in the creation of a number of spirits is
aging. The aim of the work is to study the effect of discrete-pulse energy
input on the physicochemical parameters of oak extracts. It was determined
that it is most effective to process oak chips in a rotor-pulsation
apparatus with a flow shear rate of 50? 103 s-1 and a duration of 11 hours
