Effects of 2,2′-Azobis(2-methylpropionamidine) Dihydrochloride Stress on the Gel Properties of Duck Myofibrillar Protein Isolate

Xueshen Zhu,
Jin Zhang,
Xinyu Zhang
et al.

Abstract: The aim of this study was to investigate the biochemical properties and gel-forming capacity of duck myofibrillar proteins under the effects of 2,2′-azobis(2-methylpropionamidine) dihydrochloride (AAPH)-mediated oxidation. Duck myofibrillar proteins were extracted and treated with different concentrations of AAPH solutions (0, 1, 3, 5, 10 mmol/L) and then analysed for carbonyl content, dynamic rheology, protein profiles and gel-forming properties (colour, water holding capacity, gel strength and microstructure… Show more

“…The impact of cassia seed fermentation solution on embryos is evident in Figure 4A , within the concentration range of 0.156 to 0.625%, embryos demonstrate higher hatching and survival rates, coupled with a reduced incidence of abnormalities. AAPH, a potent water-soluble azo compound, is commonly employed as a free radical generator due to its ability to decompose, yielding nitrogen molecules and two carbon radicals ( Zhu et al, 2023 ), It induces oxidative damage by attacking substances such as proteins. Embryo survival rates increase as the AAPH concentration decreases, particularly when below 2.5 mmol/L.…”
