Effects of different rain shelter coverings on volatile organic compounds in mature fruit and postharvest quality of sweet cherry

Abstract

This study investigated the effects of different shelter coverings (arched-shelter and umbrellashelter) on the volatile components of sweet cherry mature fruits in rainy areas, and the postharvest quality of these fruits during storage at room temperature. A total of 68 volatile compounds were identified and semiquantified in mature fruits. Aldehyde compounds were the most abundant, followed by alcohols. Benzyl alcohol, acetaldehyde, 2-methyl-propanal, hexanal, (E)-2-hexenal and benzaldehyde were the major volatiles, and the proportions of these compounds were greatly affected by different shelter coverings. With the extension of the storage period, the color parameters (L*, a* and b*), texture parameters (hardness, springiness, chewiness, resilience, skin strength and flesh firmness) and titratable acidity of the fruit rapidly decreased. The total soluble solid content and weight loss of the fruit gradually increased. Principal component analysis indicated that the sweet cherry fruits from the arched-shelter had the best quality and the longest shelf life. Efectos de diferentes coberturas de protección contra la lluvia en los compuestos orgánicos volátiles de la fruta madura y la calidad poscosecha de la cereza dulce RESUMENEn este estudio se investigaron los efectos provocados por diferentes coberturas de protección (arco-cobertizo y paraguas-cobertizo) en los componentes volátiles de los frutos maduros de cereza dulce en zonas lluviosas, y la calidad poscosecha de estos frutos durante su almacenamiento a temperatura ambiente. En los frutos maduros se identificó y semicuantificó un total de 68 compuestos volátiles. Los compuestos aldehídicos fueron los más abundantes, seguidos de los alcoholes. El alcohol bencílico, el acetaldehído, el 2-metil-propanal, el hexanal, el (E)-2-hexenal y el benzaldehído fueron los principales compuestos volátiles detectados. Las proporciones de estos compuestos se vieron muy afectadas por las diferentes coberturas de protección. Al prolongarse el periodo de almacenamiento, los parámetros de color (L*, a* y b*), los parámetros de textura (dureza, elasticidad, masticabilidad, resiliencia, resistencia de la piel y firmeza de la pulpa), así como la acidez valorable de la fruta, disminuyeron rápidamente. El contenido total de sólidos solubles y la pérdida de peso de la fruta aumentaron gradualmente. El análisis de componentes principales indicó que los frutos de cereza dulce bajo la protección arqueada poseen mejor calidad y su vida útil es más larga.
