“…Interestingly, emotion measurement revealed significantly higher states of adventurous and energetic feeling regarding consumption of LP compared to plain CSC. Drivers of consumer food choice are diverse, but by investigating both intrinsic sensory quality and extrinsic product information along with evoked emotions [ 30 , 31 , 32 , 33 ], further consideration of BBQ and LP CSC as a viable utilization of catfish skin seems warranted.…”

Edible insects encompass multiple species with various nutritional profiles and have been touted for complete protein, desirable fatty acid profiles, micronutrients, and bioactive compounds [4].…”

“…Various methods measuring emotional reactions to foods were elaborately discussed by Mastinu et al (2023). One study evaluated emoji meanings (pleasure-arousal-dominance dimensions) in consumer research across different countries and consumers with interpersonal differences (Schouteten et al, 2023), and another one evaluated effects of other people's facial emotional expression on consumers' perceptions (emotion, liking, and purchase intent) of cricket-containing cookies (Gao et al, 2023). Neuromarketing is a relatively new market research subdiscipline used to understand consumer behavior related to choices/preferences and purchase.…”
