Effects of ozone treatment on storage quality and antioxidant capacity of fresh-cut water fennel [Oenanthe javanica]

Abstract: Water fennel is vulnerable to a loss in quality during storage. To improve postharvest quality, fresh-cut water fennel was treated with 37.04 mg m -3 ozone for 15 minutes every 5 days, and then stored at 5 °C for 20 days, and the related quality and antioxidant capacity indexes were determined. The results showed that compared with the control group, the ozone-treated water fennel had better sensory quality, color (L*, a*, ΔE, Chroma ) and firmness after 20 days of storage, and the weight loss decreased by 47%… Show more

“…The results of the study report that the use of ozone dissolved in water reduces the decrease in the fresh weight of artichoke heads compared to the control sample [41]. Other research results indicate that ozonation of fennel reduces its weight loss by as much as 47% compared to control during 20 days of storage [42]. Ozone gas with a concentration of 10 ppm applied to green asparagus had a significant impact on reducing weight loss during 30 days of storage of the tested raw materials [43].…”

“…The reduction in the amount of flavonoid and total phenol with the increase in ozone can be related to the unusual accumulation of oxygen molecules that cannot be absorbed during ozone production. Ozone is transformed and has increased the production of ROS (reactive oxygen species) (Lin et al, 2023). Researchers conducted similar studies in this field.…”
