“…Visual color is measured using a colorimeter Hunter colorimeter (Model: D25 LT, Hunterlab, USA) as earlier described by Nayak, Mohan, and Radhakrishnan () for mustard green. Total color differences (Δ E ;Equation ) is utilized to analyze the change in varied characteristics of color (Mokhtarian, Tavakolipour, & Kalbasi Ashtari, ). normalΔE=ΔL*2+Δa*2+Δb*2 …”

“…In addition, drying air recirculation has been found to be an effective mean of reducing the effects of solar energy intermittency for the drying of some crops when using solar dryers. Mokhtarian et al [51] investigated the effects of drying air recirculation on the drying rates and quality of pistachio nuts. Drying was performed under shade, sun drying, solar drying, and recirculation solar drying.…”

“…Drying kinetics is used to show removal of moisture from products, and it has to do with process variables, and hence, a better understanding of drying rate will help in developing a drying rate model. Various experimental studies were carried out by researchers across the globe on drying kinetics show-casing of numerous leafy samples, fruits, and vegetables like broccoli (Kumar et al, 2017;Sarsavadia et al, 1999), red pepper (Doymaz & Pala, 2002), black tea (Panchariya et al, 2002), apricot (Toğrul & Pehlivan, 2002), carrot (Doymaz, 2004), eggplant (Ertekin & Yaldiz, 2004), turmeric in solar conduction dryer (Borah et al, 2017), ghost chilli in an indirect forced convection solar dryer (Rabha et al, 2017), black turmeric in forced convection solar dyer (Kondareddy et al, 2019), star fruit in solar tunnel dryer (Kondareddy et al, 2020), pistachio nuts in solar dryer (Mokhtarian et al, 2017), and red chilli in double pass solar dryer (Banout et al, 2011). It was observed from the literature review that there is a dearth of literature on the drying behavior of blood fruit.…”
