Effects of stifled cooking on the quality and lipid-lowering potential of oils extracted from two species of pumpkin seeds (Citrullus lanatus and Cucumeropsis mannii)

Abstract: Background: Hyperlipidemia is a major risk factor for cardiovascular diseases. Cucumeropsis mannii and Citrullus lanatus commonly called pumpkin seeds or egussi, the oil-rich seeds, have already demonstrated hypolipidemic activity. In Africa, these seeds are popularly used in the preparation of local foods. During that thermal process, the fatty acid content of pumpkin seeds’ oils may be altered in their functionality. Thus, this work aims at studying the effect of stifled cooking on the quality and the lipid-… Show more

“…This fatty oil reported as monounsaturated fatty oil, which is consists of high oleic acid. Monounsaturated fatty acid (MUFA) possesses lipidlowering activity that leads to CVD protection [53]. Besides that, the fatty oil of Pistacia lentiscus consists of palmitic acid, palmitoleic acid, stearic acid, oleic acid, linoleic acid, linolenic acid, arachidic acid, gadoleic acid, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), and polyunsaturated fatty acid (PUFA).…”

“…Pumpkin seeds are rich source of essential nutrients posing positive impacts on health [ 29 ]. Oils extracted from raw pumpkin seeds significantly reduced serum triglycerides, total cholesterols, LDL cholesterols, uric acid, creatinine, serum transaminases, and urea, whereas serum HDL cholesterols were significantly increased [ 30 ]. Pumpkin peel and seed mixtures when extracted presented high concentrations of oleic, linoleic, and linolenic acids [ 31 ].…”
