Abstract: Las condiciones de cultivo y el manejo poscosecha del cilantro y las fresas, propician su contaminación microbiana. Existen diversos procedimientos para desinfectar estos productos, sin embargo, es necesario establecer ventajas y desventajas de su aplicación.
