Electric field Analysis of Water Electrodes for Noninvasive Pulsed Electric field Applications

Abstract: Electroporation is an effective phenomenon of inactivating viable pathogens present in the liquid food for pulsed electric field (PEF) applications. It is a technique which depends on applied electric field strength for causing pores on cell plasma membrane. The various parameters which affect the electroporation efficacy are, the electric field intensity, pulse width, number of pulses, pulse interval and the electrode. The electrode provides a contact between the high voltage pulse generator and the liquid fo… Show more

“…To avoid metallic ion release in food, coating the electrode with a material with high permittivity has been studied (Ramaswamy et al . 2020). Among glass, alumina, quartz and plexiglass, the one with the property of permitting maximum electric field through it was alumina.…”

“…Upon extensive PEF treatment, electrode surface corrosion, causing ion release and relative toxicity to the migration of the ions to food, has been reported (Kim and Zhang 2010; Mahnič‐Kalamiza and Miklavčič 2020; Ramaswamy et al . 2020; Zhang et al . 2020).…”

“…(Simonis et al ., 2019; Alirezalu et al ., 2020; Pankiewicz et al ., 2020). However, most of the research is still at lab and pilot scale levels due to a lack of scale‐up strategies (Ramaswamy & Ramachandran, 2020; Mohamad et al ., 2023). Despite the challenges and hurdles, researchers and investigators are showing a continuous interest in the PEF technique, where dairy processing is among the majorly focused domains.…”
