Enzymatic hydrolysis using bacterial cultures as a novel method for obtaining antioxidant peptides from brewers' spent grain

Abstract: Hydrolysis of brewers' spent grain conducted in the bacterial cultures entails reduction of workload, economic cost and environmental impact.
