Estimating Oil and Protein Content of Sesame Seeds Using Image Processing and Artificial Neural Network

Abstract: Image processing has many applications in different fields of agriculture. The present study aimed to use image processing techniques and artificial neural networks (ANN) to estimate oil and protein contents of sesame genotypes without the use of time‐consuming and costly laboratory methods. The proposed method accurately estimates the parameters in sesame seeds without destructing the genetically valuable material. In this study, a set of 138 morphological features were extracted from the digital image of 125… Show more

“…Sesame seed is rich in various types of nutrients and bioactive compounds, making it a valuable oilseed (Aondona et al, 2021). According to different studies, sesame seed contains between 15% and 25% of protein, depending on the genotype (Yasothai, 2014;Parsaeian et al, 2020). After extraction of oil from the sesame seeds by either using organic solvents or mechanical pressing, a protein-rich sesame-meal is left as a by-product that contains a significant amount of protein (~30-50%) (Sari et al, 2015).…”

“…India and China are producing about 70% of the total sesame seed world production. Diverse sesame germ plasms are highly nutritious with a high content of oil (34.4%–63.2%), protein (17%–32%), fat‐soluble vitamins, and mineral (Parsaeian, Shahabi, & Hassanpour, 2020). Sesame oil (SO) is a unique oil due to the high nutritional and therapeutic values with the presence of unsaturated fatty acids of omega‐6 and omega‐9, and strong antioxidants such as sesamol, sesamin and sesamolin.…”
