Abstract:This study demonstrates correlations between water activity (a w ) and albumin denaturation temperature (ADT), and the density of intermolecular hydrogen bonding of free water (D oh(w-s) ) in hydrogenated starch hydrolysate (HSH) solutions. We first measured the osmotic concentration (c) of sugar solutions of known molecular weight (MW) and found a significant linear relationship between 1/c and MW (r 2 =0.998, P<0.0001). Next, D oh(w-s) was calculated using the MW estimated from this relationship and the glas… Show more

scite is a Brooklyn-based organization that helps researchers better discover and understand research articles through Smart Citations–citations that display the context of the citation and describe whether the article provides supporting or contrasting evidence. scite is used by students and researchers from around the world and is funded in part by the National Science Foundation and the National Institute on Drug Abuse of the National Institutes of Health.
