Abstract:This work describes the obtention of chitin and chitosan from the brown shrimp exoskeleton (Farfentepenaeus californiensis), which is collected from the Gulf of California. The chitin isolation process was carried out by a consecutive treatment that includes demineralization and deproteinization.
