“…This superiority in arrangement brought a unique framework in EGCG@CD-MOFs, where EGCG molecules obtained ordered encapsulation within cavities and tunnels of the framework. 11 Furthermore, this ordered encapsulation of EGCG molecules has even been verified to contribute to their stability and functionality as a cross-linker in the thermal−gelation process of shrimp surimi products (unpublished data).
