Evaluation of colouring ability of main European elderberry (Sambucus nigra L.) varieties as potential resources of natural food colourants

Abstract: Summary Profiling and quantitative analysis of anthocyanins in five elderberry (Sambucus nigra L.) varieties, namely ‘Haschberg’, ‘Samocco’, ‘Samyl’, ‘Samident’ and ‘Sampo’, were performed in six different maturity stages from two consecutive years (2012 and 2013) and from two growing areas in Hungary. Cyanidin‐3‐O‐sambubioside‐5‐O‐glucoside, cyanidin‐3‐O‐sambubioside and cyanidin‐3‐O‐glucoside were found and identified by HPLC‐Q/TOF‐MS as major anthocyanins and were quantified by HPLC‐UV/Vis. In optimum matur… Show more

“…In a preliminary study, anthocyanins of elderberry fruits used as a raw material for producing the concentrate have been previously identified and reported (Szalóki‐Dorkó et al ., ) that were cyanidin˗3˗ O ˗glucoside (CyG, m/z 449.1095), cyanidin‐3‐ O ‐sambubioside (Cy2G, m/z 581.1516) and cyanidin‐3‐ O ‐sambubioside‐5‐ O ‐glucoside (Cy3G, m/z 743.2041). These results are in accordance with literature data (Hong & Wrolstad, ; Wu et al ., ; Kaack et al ., ; Veberic et al ., ).…”

“…Some of them have antioxidant (Manimala et al, 2014;Cassia et al, 2005), antimicrobial (Vendruscolo et al, 2014) and anticarcinogenic properties (Deshmukh et al, 2009). These biopigments can be obtained from various natural sources such as higher plants like elderberries (Sambucus nigra) (Szaloki-Dorko et al, 2015), black grape skin, red beetroots (Beta vulgaris), oil palm fruits, seeds from annatto (Bixa orellana), paprika (Capsicum annum L.) and tomato (Lycopersicon esculentum). Pigments can also be obtained from animals such as insects like kermes (Kermes vermilio) and cochineal (Dactylopius coccus) (Yilmaz et al, 2014).…”
