Evaluation of microbiological quality of dried baim (Mastacembelus armatus) in Bangladesh

Abstract: A study was performed for five months to assess the microbiological quality of dried Baim (Mastacembelus armatus) in Sylhet region of Bangladesh. A total of 45 dried samples were randomly collected on monthly basis from three different sources of Sylhet region; one from producer (drying yard of Lamagaji) and others from retail market (Bandar Bazar) and control (prepared in laboratory). The mean total plate count (TPC) of dried Baim from producer, retail market and control were observed 6.20 ± 0.72 ×10 5 , 9.64… Show more

“…Total plate count was observed comparatively higher in samples from market than from drying yard and experiment. This result concurs with the findings of Akter et al (2018) who observed comparatively higher bacterial load in market sample than from drying yard and control. Ahmed et al (2013) also reported higher TPC in retailer market sample than the producer sample.…”

“…Total plate count (TPC) of dried tengra fish samples collected from experiment, drying yard and market were observed in the range of 4.40±.14 to 4.68±.25; 4.93±.24 to 5.59±.27 and 6.18±.17 to 6.63±.19 log cfu g -1 , respectively (Figure 3). Significant differences were observed among the samples in each month investigation which might be due to the differences in moisture and temperature in different months (Akter al., 2018).…”

“…Food safety issue is generally considered a prime factor throughout the world (Rasul et al, 2020). The presence of pathogenic bacteria in fish food is also regarded as a major threat for the consumer's health (Akter et al, 2018). Anabas testudineus (Climbing perch) is familiar as one of the important fish species in Bangladesh due to its delicious taste and high nutritional value.…”
