Evaluation of the Effect of a Grape Seed Tannin Extract on Wine Ester Release and Perception Using In Vitro and In Vivo Instrumental and Sensory Approaches

Abstract: This study aimed to systematically evaluate the effect of a commercial grape seed tannin extract (GSE) fully characterized (53% monomers, 47% procyanidins) on wine ester release and perception using a global approach. The behavior of two esters (ethyl hexanoate, ethyl decanoate) was studied in a control wine or in the same wine supplemented with the GSE in preconsumption (in vitro headspace-stir bar sorptive extraction-gas chromatography mass spectrometry (HS-SBSE-GC/MS) and orthonasal perception) and consumpt… Show more

“…Flavan-3-ol (FL)s, a fraction of B-type oligomer procyanidins (Figure 1b) slightly containing catechins (Figure 1c), are enriched in cocoa [1,2], apple [3,4], grape seeds [5,6], and red wine [7,8]. The ingestion of FL-rich foods could have a significant potential for managing cardiovascular health [9][10][11][12].…”

“…Furthermore, polyphenols can affect the persistence of esters during wine consumption (Muñoz‐González et al., 2020). According to a recent work, tannin could decrease volatility of esters and weaken perceived intensity of fruity smell through the evaluation of intra‐oral esters‐release and sensory test during wine consumption (Muñoz‐González et al., 2021). Therefore, polyphenols could influence aroma release, leading to alter retronasal perception during wine tasting in vivo condition.…”
