Abstract:The seeds of lotus (Nelumbo nucifera Gaertn.) have been used as significant medicinal and nutritional ingredients worldwide. The abundant proteins and polysaccharides in lotus seeds make them susceptible to contamination by aflatoxin (AF), a fungal toxic metabolite.
