The objective of this study was to know the physico-chemical properties of beef in relation to dental age of the animals. This experiment was conducted with five (5) treatments (T1, T2, T3, T4 and T5) where T1 = 0 Permanent incisor, T2 = 2 Permanent incisors, T3 = 4 Permanent incisors, T4 = 6 Permanent incisors, T5 = 8 Permanent incisors having ten (10) replications. From the experiment it is found that colour band of a* (P=0.0008) was significantly higher in the T5 and T2 than others and colour band of c* (P=0.0116) was significantly higher in the T5 than T1, T3 and T4. Dental age maturity of beef cattle did not show an effect on drip-loss of beef LM having the age group of T1 to T5 from the post mortem day 24 hrs to 1 week with an exception of post mortem day 5 where dental maturity has a significant effect on drip loss. Cooking loss at room temperature (RT) to 100 °C at holding time of 40 minutes was significantly higher in T1 and lower in T5. The similar trend was also observed at 100 °C in holding time of 60 minutes and 90 minutes. In both cases, cooking loss was markedly increased (p<0.001) in T1 and decreased (p<0.001) with the advances of dental maturity. Carcass pH 2h were significantly increased gradually with the advances of age T1, T2, T4 and T5; where pH2h, was highest in T3 and lowest in T1. In conclusion, dental age affects colour, drip loss (post mortem day 5), cooking loss and carcass pH 2h of meat of indigenous beef cattle.

The study was carried out to investigate the present market price of cattle hide and socio-economic status of slaughterer at three selected areas of Bangladesh. Data was gathered from one hundred and fifty randomly selected respondents from three areas where twenty household from each area who slaughtered cattle during Eid-al-Adha, twenty slaughterers from each area and thirty tannery from Hemayetpur, Savar through a structured questionnaire, from December, 2022 to April, 2023. During survey the considered parameters were the current cattle hide price at different level, respondent gender, age, literacy, family size, housing, source of income, monthly income and working experience. Result from the study revealed that all slaughterers were male and the average aged in Savar, Dhaka South City Corporation & Mymensingh City Corporation were 50.00, 37.16 & 43.61 respectively. For literacy rate of slaughterers it was found that about 36.11% had primary level education, 59.33% had secondary level education, 4.56% had higher secondary level education and no graduate were found. Their average family size were 5.75 and about 75.39% slaughterer lived on rent house and 24.61% on own house. About 94.40% slaughterer solely depend on meat processing but along with meat processing 5.60% were engaged with business. Average income of selected slaughterers were 40468.75 TK/month. Maximum slaughterer (42.00%) have been involved in this profession for 8-16 years. Major sources of hides were household (who slaughtered animal during Eid-al-Adha and for ceremonial purposes) slaughterhouse, meat processing industries etc. In household, slaughterer and tannery small size hides selling price were 245.00 and 295.00 Tk/piece respectively, for medium size 518.00 and 561.00 TK/piece respectively. In case of large size hide market price was 744.00 and 885.00 TK/piece respectively. In tannery, buying price of small, medium and large size hides were 443.00, 758.00 and 1515.00 TK/piece and 28.00, 32.00, 43.00 TK/sq. ft. respectively. The main reason for the rapid decline in the price of hide was low demand of hide and also flay defect.

“…Livestock Department's available statistics show that the domestic production of milk, meat and egg are 3.46, 2.33, and 7303 million tons in the fiscal year 2011-2012 against the demand of 13.50, 6.48, and 15392 million tons, respectively (GOB, 2011).It has been reported that in the Year 2007-08, it is evident that there is a deficit of (80%) in milk, 82% in meat and 63% in eggs in Bangladesh (FAO, 2008).Beef fattening in Bangladesh is one of the vital economical activities of farmer. The study was carried out with the interest of investigate the beef cattle production system. A baseline survey was conducted on beef cattle production in Bangladesh from two districts of each division. The study was conducted to up-date knowledge on the state of beef fatteners in their own environment. The findings of the baseline survey revealed that major beef fatteners (90%) in Rajshahi division started their cattle fattening using own money, followed by 50%, 40%, 50%, 40%, 50% and 55% in Dhaka, Khulna, Barishal, Chattogram, Sylhet and Rangpur, respectively. The average size (4.93) of livestock holding per farm in Barishal division was considerably higher than that of Dhaka (4.35), Khulna (4.71), Rajshahi (3.83), Chattogram (3.35), Sylhet (4.29) and Rangpur (3.69), respectively. In the study area, the average size (2.14, 2.63 and 2.77) of indigenous cattle per farm in the division of Khulna, Barishal and Rangpur, respectively was considerably lower than those (3.47, 3.27, 3.40 and 3.93) of Dhaka, Rajshahi, Chattogram and Sylhet division, respectively. The average duration (18.6 month) of the fattening program was considerably higher in Dhaka division than that (11.6 month) of Rangpur division. Majority of the farmers followed semi-intensive feeding system. The amount of rice straw/h/d supplied to the beef cattle is remarkably lower (3.57 and 3.72 kg) in Rajshahi and Rangpur division than those (4.38, 4.57, 4.82, 4.32 and 4.32) in the division of Dhaka, Khulna, Barishal, Chattogram and Sylhet, respectively. The amount of concentrates supplied (817.86, 814.71 and 887.50 g) to their beef cattle in Barishal, Sylhet and Rangpur, respectively was considerably higher than those (758.82, 721.43, 772.22 and 739.71 g) of Dhaka, Khulna, Rajshahi and Chattogram division, respectively. In conclusion, there were differences in demographic information, source of capitals for fattening, herd size, duration of fattening, production system and feeding system among the divisions of Bangladesh.
