“…In line with our results, the tannic acid is able to modulate the immune responses of whole blood cells in sheep stimulated by Haemonchus contortus crude larval antigen by shifting the Th1 cytokines versus Th2 cytokine expression levels in cells ( 48 ). Consistently, in grazing dairy cows receiving supplementation with tannins ( 49 ), a suppressive action of tannins on IL-1β Th1 cytokines coupled with the increased level of IL-10 is found. Taking into account data on the cytokines’ profile of growing lambs, a role for HS in modulating cytokine secretion in favor of the regulatory/anti-inflammatory IL-10 could be assumed.…”

“…The chemical structure of tannin, including the O-dihydroxy structure in the B ring and the galloyl groups, might be involved in the activity of inhibiting lipid peroxidation, suggesting that they are important determinants for radical scavenging and antioxidative potential [ 42 ]. Previous studies have shown that supplementing TAN in the diet can enhance antioxidant capacity in the plasma or liver of dairy cows [ 43 ] and goats [ 44 ]. While past research has seldom reported on the ability of dietary TAN to mitigate lipid peroxidation in the liver of beef cattle, our study presents a novel finding in this regard.…”

“…The potential of TAN to inhibit liver lipid peroxidation in beef cattle may be attributed to its gallic acid composition. This component can scavenge free radicals and bolster endogenous antioxidant defense mechanisms against them [ 43 ].…”

“…It is worth noting that the primary effect of resveratrol is its antioxidant action, a characteristic shared with other dietary antioxidants such as tannins and vitamin E [ 47 ], which are also present as supplements in cheese and may contribute to its properties [ 48 ]. Moreover, apart from antioxidants, cheese also contains vitamin D and calcium due to supplementation.…”
