Fettkügelchen‐Größenverteilung in homogenisierter Milch und anderen Öl‐in‐Wasser‐Emulsionen

Abstract: Unter Benutzung der Mieschen Theorien über die Lichtstreuung an Dispersionen optisch isotroper Kugeln kann bei homogenisierten Emulsionen mit mittleren Tröpfchendurchmessern > 0,2 μm eine Meßmethode verwendet werden, die es gestattet, aus dem spezifischen Trübungsspektrum einer stark verdünnten Emulsion Art und Parameter der Teilchen‐Größenverteilungsfunktion zu ermitteln.
