Food creation with 3D gel printer for foods

Abstract: The market of care food is growing for aging society and the personal version of care food will be needed for improving a fun of meal. On this occasion, 3D printing technologies have been developed and are being applied for food creation. In the present study, we prepare food ink for the world-first 3D gel printer designed by our group. The hardness of food is one of the most important factors that influence the texture of food. So that the jelly foods made by the 3D gel printer is designed being soft and easy… Show more

“…industry is considered to represent the third industrial revolution. It has converted an expensive robotic technology to an affordable technology due to the open access designing and slicing software, easily accessible machine parts, and endless effort of the developers in this field (Hamilton, Alici, & In Het Panhuis, 2017;Pallottino et al, 2016;Shitara et al, 2015).…”

“…Complex food mixtures like fruit puree or concentrates can be converted into different attractive constructs which are not possible by traditional means of food processing (Antlej & Russo, 2015;Hamilton et al, 2017). Up to date, different gel systems and slurry-type non-food materials have been studied for 3DP (Bakarich et al, 2017;Gong et al, 2014;Shitara et al, 2015). To 3DP a multicomponent system like food/food mixtures, it is necessary to achieve proper flow properties so that the mixtures could be extruded and as well as retain the structure of printed objects after printing.…”
