“…They are 1‐amino‐1‐deoxy‐2‐ketose compounds and pure ACs are typically white or light yellow powders without aroma, but some may further degrade to form aroma compounds (Zhou et al., 2020). Recent research have reported that some ACs also exhibited antioxidant activity (Ide et al., 2002; Murakami et al., 2010; Yu et al., 2020), high angiotensin‐converting enzyme (ACE) inhibitory activities (Fru‐Pro, Fru‐Glu, Fru‐His, Fru‐Arg, and Fru‐Leu), and a variety of beneficial physiological activities such as immunomodulatory effect (Fru‐Pro), antitussive effect (Fru‐Asp), angiogenic activities and antithrombosis effect (Fru‐arg, Fru‐leu), and tumor‐preventive effect (Fru‐his) (Glinskii et al., 2012; Glinsky et al., 1996; Ha et al., 2011; Li et al., 2022; Mossine et al., 2008; Tarnawski et al., 2007; Yu et al., 2020; Zhang et al., 2019; Zhou et al., 2022).…”
