Formation of Deoxy-fructosazine and Its 6-Isomer on the Browning Reaction between Glucose and Ammonia in Weak Acidic Medium

Abstract: Deoxy-fructosazine and its 6-isomer were isolated from the browning mixture prepared by the reaction between glucose and ammonia in weak acidic medium, and were identified, respectively. The two compounds among all pyrazine derivatives formed in the reaction were incomparably abundant in approximately equal ratio. It was supposed that deoxy fructosazine and its 6-isomer would be formed concurrently by condensation of ammonia with 3-deoxy-glucosone and isoglucosamine.
