General Model, Based on Two Mixed Weibull Distributions of Bacterial Resistance, for Describing Various Shapes of Inactivation Curves

Abstract: Cells of Listeria monocytogenes or Salmonella enterica serovar Typhimurium taken from six characteristic stages of growth were subjected to an acidic stress (pH 3.3). As expected, the bacterial resistance increased from the end of the exponential phase to the late stationary phase. Moreover, the shapes of the survival curves gradually evolved as the physiological states of the cells changed. A new primary model, based on two mixed Weibull distributions of cell resistance, is proposed to describe the survival c… Show more

“…After the first 30 to 60 min, survival behavior was concave (up) or nearly log linear. As in previous studies (9,19,25,41), a Weibull model was used to describe the survival curves. E. coli O157:H7 exposed to 4% NaCl and less than 20 mM acetic acid had survival curves with a remarkable tailing behavior.…”

“…Therefore, it is important to quantify the effects of antimicrobials used in preventing the survival of O157:H7 in acidified vegetable products. Mathematical models of microbial inactivation of bacteria by heat, pressure, and chemicals have been extensively studied (1,9,15,16,19,41). Traditional approaches to measuring the killing of bacteria by environmental stress use first-order kinetics (16).…”

“…There are other factors that can affect the composting outcome, and those factors also need to be taken into consideration while studying microbial behavior during the composting process. Mathematical models that incorporate most of the factors that microbial cells are exposed to during composting will have high predictive strength (6). Based on our results, moisture was identified as one of the factors that affect pathogen survival during composting, with negative coefficients of correlation in the Weibull parameters ␦ 1 and ␦ 2 ( Fig.…”

“…Bacteria persistence might be explained according to matrix type: in solid matrix, local microenvironments where aw is weaker. Bacteria located in these microenvironments are more heat-resistant compared to global population (Coroller et al, 2006). Otherwise, food products are more complex than nutrient broth and potentially include components that might protect spores (Leguerinel et al, 2005;Samapundo et al, 2014).…”
