Glycemic Index Values of Rice Varieties that are Commonly Available in Markets in Bangladesh

Abstract: Glycemic Index (GI) of six common rice varieties in the local markets of Bangladesh was assessed and categorized in this study to investigate manipulative varietal performance for the time being. After overnight fasting, each of ten selected healthy non-diabetic volunteers (males and females in ratio of 1:1) was fed with reference food (50 g glucose) and test foods (50 g carbohydrate-containing different rice varieties) in every two days intervals. After feeding, glucose levels (mmol/l) were measured at 0, 15,… Show more

“…HCY had the highest GI compared to the other pigmented rice samples. Kabir et al (2021) stated that there is an inverse relationship between GI and amylose, which was supported by the current results as the amylose contents of the red rice (HHB), brown rice (HCY) and purple rice (RB) were 25%, 20.5% and 23.3% respectively (Ascheri et al, 2012;Thongkaew and Singthong, 2020;Farooq et al, 2021).…”

“…The GI of cooked rice ranges from 37 to 151, depending on variety, processing, and recipe factors [ 14 , 15 , 16 , 17 ]. Among milled (white) rice, the rice with the lowest GI are Basmati, Doogara , and some hybrid rice [ 18 , 19 ]. Rice from the Japonica subspecies (local rice) has the highest GI, with Portuguese varieties Ronaldo and Ariete having GIs of 89 and 151, respectively [ 16 ].…”

Brown (whole grain) rice and parboiled rice (rice pre-treated with steam prior to milling) tend to have the lowest GI compared to their polished forms [ 18 , 20 ].…”
