Abstract:This study is aimed at measuring the color and nutrient contents of local pigmented rice from South Sulawesi. Five grams of husked rice grains are placed on a 60 mm petri dish before attaching the TES 135 colorimeter. Total protein content was measured using the Kjeldahl method. Total fat content was measured using Soxhlet. Selected varieties were analyzed further for zinc (Zn) and iron (Fe) content using Atomic Absorption. Spectroscopy.
