Abstract: Wprowadzenie i cel pracy. Ocet jest fermentowanym produktem rozpowszechnionym na całym świecie. Stosowany jest przede wszystkim jako przyprawa w celu wzbogacenia smaku dań oraz utrwalenia żywności w postaci marynat. Ocet może jednak stanowić źródło wielu związków o pozytywnym wpływie na organizm człowieka.
