Health Benefits, Antioxidant Activity, and Sensory Attributes of Selected Cold-Pressed Oils

Dobrochna Rabiej-Kozioł,

Barbara Stawicka
et al.

Abstract: The consumption of cold-pressed oils (CPOs) has continuously increased due to their health-promoting compounds, such as polyunsaturated fatty acid (PUFA), tocopherols, sterols, and polyphenols. This study focused on the estimation and comparison of the physicochemical properties and sensory quality of six CPOs: linseed oil (CPLO), pumpkin oil (CPPO), milk thistle oil (CPMTO), rapeseed oil (CPRO), camelina oil (CPCO), and sunflower oil (CPSO), which are the most popular in the Polish market. These oils were ana… Show more

“…To obtain natural oil products, the pressing method is based only on a mechanical process [54]. Therefore, the pressing method is a rich source of phytosterols, tocopherols, carotenoids, and polyphenols that are associated with antioxidant capacity [55,56]. According to previous studies, the pressing method has advantages with regard to the retention of active components to scavenge free radicals both in vivo and in vitro [57,58].…”

“…These oils generally have relatively higher levels of bioactive compounds such as polyphenolic compounds, phytosterols and tocopherols contributing to their association with positive health benefits. 139 Cold pressed oils are defined as ‘those obtained, without altering the oil, by mechanical procedures only, e.g. expelling or pressing, without the application of heat.…”
