The biological cause of PSS, which leads to PSE meat, is the excessive release of calcium ions, which is promoted by a genetic mutation in the ryanodine receptors (RyR) located in the sarcoplasmic reticulum of the skeletal muscle cells (Fujii et al 1991; Ziober et al 2010).
