A total of 168 samples of livers, kidneys and muscles (part of the diaphragm) were screened. The samples were subjected to preparation & for measurement the level of copper by using Atomic Absorption/Flaming Emission Spectrophotometer. Buffaloes organs showed variations in their manganese content.Results revealed that manganese concentrations in buffalo livers were 3.82 0.61 as a mean where the levels varied from 2.85 to 5.36 µg/g wet weight. In kidneys of buffalo the minimum, maximum and mean values were 1.50, 4.47 and 2.96  0.71 µg/g wet weight, respectively. Moreover, the mean concentrations of manganese in muscles of buffalo was 1.85  0.52, with a minimum of 0.89 and a maximum of 2.68 µg/g wet weight. On the other hand, for cattle, mean  standard deviation and range of manganese concentrations in livers were 4.54  2.51 and 2.14-14.14 µg/g wet weight, respectively. While the corresponding values in kidneys were 3.07  2.47 and 0.89 -13.57 µg/g wet weight. Moreover, the mean concentrations of manganese in muscles of cattle was 3.11  5.5 with a minimum of 0.89 and a maximum of 28.57 µg/g wet weight. In conclusion, livers samples have high concentrations of manganese than kidneys and muscles.

Spices and herbs are being used as a diet ingredient often to improve color, aroma and acceptability of food. The contamination of spices with heavy metals may result in the accumulation of these metals in the body organs. The aim of the present study was to investigate As, Cu, Fe and Zn contents in the most popular spices and herbs that are used in Egyptian cuisine. Ten samples were purchased directly from the local markets in Egypt. Arsenic, Copper, Iron and Zinc contents in the samples were determined by atomic absorption spectrophotometer after acid digestion. The concentration ranges for the studied elements were found as 0. 02-0.11, 3.72-21.04, 47.39-1261.21, and 2.14-314.05mg/kg for arsenic, copper, iron, and zinc, respectively. The obtained data compared well with the counterpart data reported internationally. The World Health Organization has given the maximum permissible limits of arsenic, copper, Iron and Zinc in species, i.e. 1, 50, 300 and 100 mg/kg, respectively.

ABSTRACT:In this study, the levels of trace metals (Cd, Cr, Cu, Co, Fe, Mn, Ni, Mo, Pb, Zn) in twenty two spices representing four spice groups (seeds, bulbs, leaves, fruit pods and rhizome) from a major market in Northern Nigeria were determined using atomic absorption spectroscopy, and assessed based on regulatory standards. Garlic exhibited the highest zinc concentration (21.733 ±0.044 mg/kg), which falls lower than the upper toxic level for most plants. Lead concentrations peaked in African nutmeg (4.717 ± 0.017 mg/kg) but are lower than the normative for the final dosage form of medicinal plants. The daily intake-based hazard of the spices was assessed using the minimum risk levels set by WHO, and the FAO/WHO maximum tolerable intake limits. All the spices contain excessive cobalt and copper with maximum levels (mg/kg) in ginger cobalt (11.117±0.069) and African nutmeg (15.300 ± 0.041), respectively. The estimated daily intake values (µg/kg day) of onion (1.10), ginger (12.00), utazi (1.30), alligator paper (1.20), garlic (0.89), Ashanti leaves (0.88), castor seeds (1.20), and shallot (0.86)were higher than the provisional maximum tolerable intake set by FAO/WHO, constituting a potential risk to human health. These results show that spices can accumulate exceeding levels of toxic metals whose potential risk to human health should be given priority. © JASEM http://dx.doi.org/10.4314/jasem.v20i3.23
