Heterologous Biosynthesis of Hyaluronic Acid Using a New Hyaluronic Acid Synthase Derived from the Probiotic Streptococcus thermophilus

Abstract: Hyaluronic acid (HA) is a natural linear polysaccharide extensively used in many fields, including the food, medicine, and cosmetics industries. Currently, species that produce HA synthetase (HAS) from microbial sources are relatively small and mainly pathogenic, such as Streptococcus pyogenes and Pasteurella multicide. Moreover, there is limited research on the safe microbial sources of HAS. Thus, we characterized SthasA, a HAS derived from the probiotic Streptococcus thermophilus, and used it for the de novo… Show more

“…The peak at 1040 cm −1 is ascribed to the C–O flex vibration of carbinol resulting from the helix structure formed by the hydrogen bond in or between HyA molecules. 29 The ether bands are assigned at 1163 and 964 cm −1 and the latter band belongs to the asymmetrical out-of-phase ring vibration. In the spectrum of HyA-loaded hybrid PHG/HyA gels, the characteristic 1200–950 cm −1 range of HyA is observed by four bands centered at 1150 (C–O–C group), 1077, 1044 (C–OH group) and 948 cm −1 , typical for carbohydrates.…”
