Abstract:Soybean (Glycine max (L.) Merril) is beneficial for lowering blood sugar, relieving menopausal symptoms and preventing dementia. This study aims to determine the effect of the acid catalyst used on the hydrolysis process of soybean starch (Glycine max (L.)
