How Glycerol and Water Contents Affect the Structural and Functional Properties of Starch-Based Edible Films

Abstract: As starch is an inexpensive, filmogenic, easily processable and a widely available material, it is a material that can be utilized in the creation of biodegradable films and containers, presenting as a viable alternative to polymers derived from petrol. Moreover, starch could also be used to create edible coatings for fresh foods in order to extend shelf life. As such, wheat starch films with two glycerol contents were formulated to mimic the effects of compounds currently used to coat fruit. Their structural … Show more

“…The peaks centered at 1132 cm −1 and 1070 cm −1 may be ascribed to the contribution of the C-C and C-O bonds in secondary alcohol groups of -CH-OH. For glycerol, five characteristic bands at the wavenumbers in the 1150-850 cm −1 range arise from the vibrations of C-C and C-O linkages [77]. The FTIR spectrum of PEO 2000 exhibited CH 2 scissoring at 1465 cm −1 , CH 2 wagging at 1357 cm −1 and 1340 cm −1 , CH 2 bending at 1280 cm −1 and 1240 cm −1 , C-O-C stretching at 1093 cm −1 and 1145 cm −1 , and CH 2 rocking at 962 cm −1 and 847 cm −1 [78].…”

“…Glycerol is a lackluster, scentless, thick fluid that contains three hydroxyl bunches propane-1,2,3-triol, and the consolidated corn starch with glycerol, which explain its hygroscopic character and dissolvability in water. The conventional applications of glycerol incorporate its consolidation into the food industry, the creation of pharmaceuticals, and individual consideration items, while it is the enemy of coolers, herbal concentrates, and numerous different procedures as a middle of the road compound [ 62 , 63 ].…”
